Tasting notes
Fresh and elegant, with delicate notes of apricot, green apple and pear. A blend of grapes hand-picked in France’s Alsace region, made using the traditional method. Pairs perfectly with fish, white meat, soft cheeses, and good company.
How it is made
Saysah is a signature blend of three grapes.
- Pinot Blanc, 65%. The backbone. Gives it a light and refreshing acidity, with floral and fruit flavours like green apple, peach and pear.
- Pinot Noir, 25%. A red grape, famous the world over. Gives structure and finesse and rounds off the other two. The red skins are removed for the Brut.
- Riesling, 10%. Small amount, loud voice. Florals and apricot, and the sharpest acidity of the three.
The result is a velvety harmony of small bubbles, refreshing and round, with light acidity balanced by fresh fruit and the brioche or toasty notes that good sparkling wine is loved for.
Our blend is ours alone. Made for Saysah, not sold to anyone else. Stéphane and Mickaël adjust it with each harvest so the wine tastes the way it’s meant to, whatever the weather did.
It comes off a farm, not a production line. That’s the difference between this and the bottom shelf.
- Hand-picked at Domaine Moltès, a third-generation family estate in Pfaffenheim, Alsace. Hand-harvesting isn’t a choice here — it’s written into the appellation rules.
- A second fermentation inside each bottle, the traditional method.
- Aged on the lees for at least 12 months, for even fuller flavour. The appellation requires 9. Turned in the bottle over months. One of the most labour-intensive ways to make any drink and it shows.
Delivery and returns
Free delivery on six bottles or more to a UK mainland address. One to five bottles: delivery is calculated at checkout.
Every parcel is signed for by an adult. Challenge 25 applies, no exceptions.
If something’s wrong. If a bottle arrives damaged or isn’t what you ordered, tell us and send a photo and we’ll replace it or refund you. The sooner we know the quicker we can sort it. This doesn’t affect your legal rights.
If you change your mind. You have 14 days from the day your order arrives to tell us, and a further 14 days to send the bottles back. Return postage is yours, and bottles need to be packed well enough to survive the trip. We can’t accept bottles that have been opened.

The questions people often ask.
How much is it?
The founding price goes to the wait list first, before pre-orders open. Join it and you’ll hear before anyone else. Cases of six come with free UK mainland delivery, and single bottles will be available too.
When will my order arrive?
Pre-orders dispatch in December, in time for Christmas. We will email you with tracking when your case leaves us.
Do I have to be 18?
Yes. It is illegal for us to sell alcohol to anyone under 18, and every delivery is signed for by an adult. The driver may ask for ID under Challenge 25.
Where can I buy Saysah in a shop or bar?
Not yet. Saysah launches direct from this website first, with independent wine shops and bars following in 2027. Tell us where you would like to find us and we will do our best.
Can I send it to someone else as a gift?
Yes. Add their address as the delivery address at checkout. Please make sure someone over 18 will be there to sign for it, as every delivery is signed for by an adult and the driver may ask for ID.
Can I add a message?
Yes. There’s a box in your cart, before checkout, for a short message, and we’ll include it with the case.
Does it come in a gift box?
Yes. Every case arrives in a gift box, so it’s ready to hand over as it is.
Can I choose the delivery date?
Not yet. Pre-ordered cases are dispatched in December, in time for Christmas, but we can’t offer a named delivery day on this first run. We’ll email you with tracking as soon as yours is on its way.
