Organic Crémant d’Alsace. Fine fizz without the formality. For special occasions, like birthdays… and Thursdays.

Not for the wedding. Not for the milestone birthday.
For the Friday night after a week that nearly broke you. The book club where nobody actually read the book. The sunny Sunday with no commitments other than to a good time.
Small moments that deserve something better than the Prosecco you have outgrown, without the formality or the price tag of Champagne.
Saysah is a delicious sparkling wine, made the hard way.
All of the craft, none of the ceremony. All of the pop, none of the pomp.
So you don’t have to save it for the milestones.
Organic Crémant d’Alsace. Fresh, light, floral and highly quaffable. Always in good company.
Hand-picked grapes, a second fermentation in the bottle, turned over months, at a third-generation family estate. One of the most labour-intensive ways to make any drink, and it shows.
Not for people with something to prove. No wine snobbery here.

French sparkling wine made by the traditional method. The grapes are picked by hand — that isn’t a choice, it’s written into the appellation rules — the second fermentation happens inside the bottle, and the wine rests there for at least nine months before anyone is allowed to sell it.
Crémant d’Alsace has had its own protected appellation since 1976. Most Britons have never heard of it. The French have been quietly drinking it for fifty years.
The name comes from the French for creamy and is used to describe the sensation of the tiny bubbles in the mouth.
Everything you wanted to ask about CrémantTwo syllables, equal weight on both. Say, then sah, like see-saw.
It’s a playful way to spell “C’est ça”. Meaning that’s the one. Which is exactly what we felt when we tasted our wine.
Say
We visited tens of vineyards and then we went to Wine Paris and tasted over a hundred Crémants to find this one. It was a tough gig. Somebody had to.
Our friend — a career wine buyer for one of the really posh London wine houses — tasted separately and picked the same bottle.

Here’s what people have said, when tasting Saysah for the first time:
Wine Paris is thousands of stands of people in very good suits. Mickaël Moltès was not in a suit. He stood out for this reason and we were drawn to him.
He and his brother Stéphane are the third generation at their estate in Pfaffenheim, Alsace.
He answered every question straightforwardly, he was genuinely interested in what we were trying to build, and his was the wine we’d already chosen blind, out of more than a hundred.
The estate is fully certified organic - which is unusual in this category, and says something specific about how the vineyard is managed, not just what goes on the label.
They had never cracked the UK. We’re their way in, and they’re ours.

It’s not just about the wine. It’s about some things being too good not to share - a great book, a bar you’ve just found, a long evening together with friends.
Most of us have a bottle we’re saving for an occasion that hasn’t quite happened yet. But as someone famous once said, life is what happens when you’re busy making other plans.
Twenty-six years living in Europe taught us that life is for living in the moment. And this is why we are launching Saysah. For big occasions and medium ones.
