Amanda and Tom

Our story

Twenty-six years in Europe, one idea we didn’t act on, and a second opportunity we couldn’t resist.

Amanda and Tom, the founders of Saysah

Don’t save it for the milestones.

We moved to Rome for three years and stayed for thirteen. Something about how life was lived there felt closer to how it should be lived. The early evening aperitivo. The unhurried table. The meal as the event rather than the fuel between tasks.

When that chapter ended we didn’t go back to London. We went to the Netherlands, partly for the job and mostly because it kept us on the continent. Thirteen more years, with the best of Europe – France, Italy, Switzerland, Belgium – all on our doorstep. And the Dutch work to live rather than the other way round: the day ends when it ends, and what follows belongs to their families and the things they actually care about.

26 years on mainland Europe, watching a different relationship with everyday pleasure has taught us to make the most out of the everyday moments, as this is where life is lived, not during the milestones. This is one of the founding philosophies for building our own business and brand.

The Prosecco we didn’t import.

Back in Rome in 2000, Amanda was at the start of her international career with Unilever. We spent many an evening in the Prosecco bars of the city alongside other ambitious marketers. And we said to each other: should we give up our day jobs and import this to Britain? At the time Prosecco was the only credible alternative to Champagne, and it was genuinely fantastic — before the mass production, before it became the thing it is now.

We decided it wasn’t the moment. We were at the beginning of something, and the timing felt wrong.

Prosecco went on to reshape the UK sparkling wine market entirely. We watched it happen from the sidelines.

Then friends in Alsace poured us a Crémant, and the whole thing came back to us. Crémant is having its Prosecco moment. A wine of real quality that Britain barely knows, in a category nobody has yet put a brand to.

We’re in our early fifties. If we don’t do this now, we never will.

From a spreadsheet to a brand.

In spring 2025, we started looking at the opportunity seriously. The numbers were compelling enough to keep going.

In December we came across Eggbox, a six-month founder programme run with Mother, a creative agency Amanda had admired for twenty years and never got to work with. We applied. Several rounds later we were one of twelve startups chosen from four hundred applications. We started in April.

Five months on, the brand exists and we’re getting ready to launch.

We know a good wine when we taste it. We leave the growing to the experts.

We went out of our way to find the best Crémant for the British palate. We visited tens of vineyards. None of them were perfect. Then in February 2026 we went to Wine Paris and tasted over a hundred Crémants to find this one. It was a tough gig. Somebody had to.

Our friend, a career wine buyer for one of the really posh London wine houses, tasted separately and picked the same bottle.

Mickaël Moltès was not in a suit. He stood out for this reason and we were drawn to him. He answered every question straightforwardly, he was genuinely interested in what we were trying to build, and his was the wine we’d already chosen blind.

That was enough. This time we were not letting the moment pass.

Founders

The two of us.

We understand people — what they are looking for when they reach for bubbles. Most bottles tell you about the vineyard. We’d rather talk about the occasion.

Amanda

Thirty years building consumer brands for Unilever, Philips and Pura.

Tom

The wine man, WSET qualified, and frankly obsessed. The kind of person who opens a bottle and makes everyone fall in love with it, which for a brand built on this matters more than it sounds.

The Zinnkoepflé vines above the valley

Crémant is a faff to make. So we love that ours is made in Pfaffenheim.

Domaine Moltès is a third-generation family estate in Pfaffenheim, Alsace, fully certified organic across the whole vineyard, not just this wine. Stéphane and Mickaël Moltès run it today.

They had never cracked the UK. We’re their way in, and they’re ours.

The wine in full

Special. Current. Social.

What we stand for

A new sparkling ritual, rooted in connection and presence.

Saysah is special

Bubbles have a way of lifting the moment but Saysah goes beyond. We turn drinking occasions into a moment.

Saysah is current

This is good wine for people with good taste. It’s the clued-up choice for a new style of drinker. People who care less about showing off their taste, and more about sharing it.

Saysah is social

Our bottles beg to be shared. Pull people together. Because the best moments can only spark from good company.
